Zutaten

• 260 g all-purpose flour
• 220 g sugar
• 40 g ground almonds
• 40 g cocoa
• 200 ml soymilk
• 120 ml vegetable oil
• 1 teaspoon vanilla extract
• 2 teaspoons baking powder
• 1/2 teaspoons baking soda
• 1/2 teaspoons salt
• 4-5 tablespoons apricot jam

Zubereitung

• Preheat oven to 180°. Line muffin pan with cupcake liners.
• In the bowl of a mixer mix flour, sugar, almonds, cocoa, baking soda, baking power and salt.
• Carefully add the wet ingredients . And beat on medium speed until incorporated. Don´t overbeat it!
• Fill cupcake liners about 3/4 full and bake in preheated oven for about 15 minutes at 180°.
• Let the cupcakes cool in the pan for about 1-2 minutes, then remove them carefully and let them cool on a rack.
